九州大學發布其植物色素指示膜

九州大學研究人員開發出一種植物色素指示薄膜,結合天然新鮮度指示功能與自我修復特性。這種物料採用花青素——一種植物萃取色素,會隨食物腐壞導致酸鹼值上升,而由紫紅色轉變為黃綠色,毋須開啟包裝即可提供可見的新鮮度訊號。

為提升穩定性,研究團隊先將色素固定於 UiO66-NH₂ 金屬有機骨架之上,再將其融入一種可生物降解的水凝膠薄膜之中。在豬肉測試中,這種物料能隨腐壞過程持續作出反應,並較未經處理的樣本延長約 12 小時保質期。當薄膜被切開再重新按壓貼合時,痕跡在數分鐘內幾乎完全消失,並於兩小時內恢復 99% 的拉伸強度。

對消費者及品牌而言,這種物料有助提升新鮮度可視性、減少食物浪費,並在包裝出現輕微損壞後,維持其完整性。

Researchers at Kyushu University developed a plant-pigment indicator film that combines a natural freshness indicator with self-healing properties. The material uses anthocyanins, plant-derived pigments that change from purple-red to yellow-green as food spoilage raises pH levels, providing a visible freshness signal without opening the package.

To improve stability, the team anchored the pigments to a UiO66-NH₂ metal-organic framework before incorporating them into a biodegradable hydrogel film. In pork tests, the material responded continuously as spoilage progressed and extended shelf life by about 12 hours compared with untreated samples. When cut and pressed back together, the film became nearly invisible within minutes and recovered 99% of its tensile strength within two hours.

For consumers and brands, the material could improve freshness visibility, reduce food waste and help maintain package integrity after minor damage.
